– 1 1/2 bunches cavolo nero, thick stems removed, leaves roughly torn – 500g dried rigatoni pasta – 1/4 cup (60ml) extra virgin olive oil – 2 garlic cloves, crushed – 1/2 cup (40g) finely grated pecorino, plus extra to serve

Ingredients
Prepare Lemon Pangrattato: Heat butter and garlic. Add breadcrumbs and chilli flakes, cook until crispy. Season with salt, toss with lemon zest, set aside.
Cook Cavolo Nero: Reheat pan, add oil and cavolo nero leaves. Cook until crispy. Repeat twice. Toss with pangrattato, set aside.
Prepare Pasta: Blanch cavolo nero. Cook pasta, drain, reserve 1/2 cup cooking water. Return pasta to pan, cover to keep warm.
Make Sauce: Drain blanched cavolo nero. Blend with oil, garlic, pecorino, and reserved pasta water until chunky pesto consistency. Season with salt.
